when all else fails post a recipe

I am having a hard time finding my words right now. I look at the blank computer screen and panic because nothing comes.

Nothing.

Part of it is sheer busyness. I am just whirling in circles with the kids, work, volunteering, etc. I hardly have time to breath much less write. Part of it, though, is simply self doubt creeping in. I see wonderful writers and artists around me every day. They are writing brilliant blogs, penning novels, winning awards, and publishing.

And I am not.

I know, I need to just get over it. If a writer's life was what I really wanted I should have aimed for a degree in English rather than Anthropology. But I didn't take that route, and I have to live with my choices.*

So to fill the space and to make me feel a little more accomplished I will post a recipe. Here is my favorite Lemon Pie recipe, adapted from the Fannie Farmer Baking Book.

1 9-inch pre-baked pie shell
1 cup sugar
6 tablespoons cornstarch
2 cups water
1/2 cup lemon juice
3 egg yolks
1/4 teaspoon salt
3 tablespoons butter
grated rind of 1 lemon (both white and yellow)
whipped cream or cool whip for topping

Blend the sugar, cornstarch, and water in a saucepan. In a separate bowl beat the egg yolks with the lemon juice then add to the sugar mixture.

Cook over medium heat while stirring constantly. The mixture will become translucent and thick. Cook three minutes longer while continuing to stir.

Remove from the heat and cool for at least one hour. When the mixture is cool spread in the pie shell and top with whipped cream or cool whip

Refrigerate if not serving immediately.

My favorite pie - the one I make SO often - is a butterscotch pie covered in whipped cream. IT IS SO GOOD.
In fact, I am going to make one right now. It is THAT good. And your pie looks delicious.

(I think that any creative person goes through arid spells, really. And I think creative self-doubt only indicates that you don't have noxiously high self-esteem. It will come back.)

Yum. I can't remember the last time I had lemon pie. My mom used to make a lot of different kinds of pies, including lemon meringue. She doesn't any more, but I sort of figured out that I don't like pie all that much anyway. Like doughnuts, the pie dough upsets my stomach. Boy, that's the last thing you want to add on top of a holiday meal and a couple glasses of wine! So instead of pie, how about some fudge?

I disagree with your suggestion that if you'd wanted to lead the life of a writer, you should have majored in English instead of anthropology. I believe that, if I had the time to conduct some research on this topic, I could quickly find 100 non-English-majoring authors you respect and admire. Most of the writers I enjoy led colorful, nonacademic lives. They drew on life experiences, keen observation of humanity around them, and their own emotions. Just like you.

So cut the crap, Green. You are a writer, and a good one, whether you admit to it or not.

And good lord does that pie sound good.

Ahem.

My Grandmother's Lemon Meringue Pie has captured my heart so completely that I am ruined for almost any other pie. Although, I did have a chocolate pie once that made a rather convincing go of it.

Strawberry Rhubarb is one of my favorites. Allison and I are going to make the Lemon pie today. Do you add the lemon rind when you add the lemon juice? And the cranberry bread was great. Keep up the yummy postings!
